Ingredients:
Spicy Ginger Syrup -
- 1/2 cup BeeNZ Kanuka Honey
- 1/2 cup water
- 1 small piece fresh ginger (sliced)
- 1/2 tsp cayenne pepper
Cocktail - (Serves 8)
- 1/4 cup pomegranate juice
- 1/4 cup grapefruit juice
- 1/4 cup tequila
- 2 Tbsp spicy ginger syrup
- Juice from 1/2 lime
- Ginger beer for topping up
- Garnish with pomegranate seeds + mint leaves
Method:
Spicy Ginger Syrup -
Bring 1/2 cup water to boil. Remove from heat and let slightly cool. Add Kanuka honey, sliced ginger, and cayenne pepper. Cover & let sit for 10 minutes. Strain out giner and store in a glass jar in fridge.
Cocktail -
In a large jug, combine pomegranate juice, grapefruit juice, lime juice, Spicy Ginger Syrup and tequila. Mix until combined and chill until ready to serve.
Coat glass rims with juice of lime, salt and cayenne.
Prior to serving, add ice to pitcher and top up with ginger beer. Serve up and top each glass with pomegranate seeds and mint. Enjoy!
